Ok my Avid juicy sevens are dead, time for a new brake set. My bikes an 08 stumpjumper FSR with IS brake mounts. Can I use the IS to post mount converters from the avids for the hopes and can I use the old rotors too?
Any advice appreciated...

As long as you dont get the vented rotors then discs and mounts are interchangable.
You say your 7's are dead, is there any chance you have one of the levers in working order because I have just snapped mine and in need of a new lever.

I am after the full lever assembly (pistons and all), is this what you have or just the blade?

The mounts and rotors will fit ok, but it's worth getting the floating rotors with the brakes as they are only a extra tenner each when got with the brakes, the mounts are a nice machined silver that match the callipers as well, if your a tart
