I've been quite impressed with Bontrager XR4 Team Issue (in 29er though).

Lightish, seem tough, cheap, and roll quite well. They don't even at any one thing but they're pretty good at most imho. Plus tanwalls (dull version also available)

They are probably a bit more 'trail' than xc though.

Continental do quite a selection still in 27.5x2.2-ish sizes, Trail King might be the one to go for (or Race King if you're brave/more at the gravelly end of things).

Main thing to be aware of is they also do wire bead/performance versions of most of the tyres so sometimes if you see something that looks very cheap, it's because it's the heavy non-tubeless version.

Schwalbe Wicked Wills are what you need, which are made in a 27.5 x 2.25 size but are quite hard to find.

You can still get Rock Razors in a variety of flavours and sizes quite cheap. I picked up 27.5 x 2.6s about 18 months ago for my Scout. They are quite fast.

Mezcals and Barzos will be great in the summer

In the winter you’ll want a narrower tyre with widely spaced knobs. The xr4 might work as a year round tyre. But i think a more specific mid specific tyre might be needed in the winter. I can’t recommend a specific type. I’m just on the edge of the clay hell areas so can avoid them in winter

Not what the op wants but a 3.0 xr4 on the front of my Stooge is great on most surfaces. Another  option is  the Forekaster. Does anyone run a Barzo out back?

I run Barzo's F & R on my Yeti ARC hardtail (admittedly 29er) but they're great, personally I've never felt it's slow enough on the rear to change to a Mezcal rear (I have double-Mezcals on the gravel bike and don't really feel much faster TBH)
