Looking at doing this and wanted to check out what people's tyre choices are and if the ride changes are worth the effort over the 26 wheel set up?

Some people undoubtedly will be. 650b wheels don't really make a difference compared to 26. What you will do is mess up the geometry. A high bottom bracket is going to make a bigger difference than a bit bigger balloons strapped to a wheel.
The only reason to do this would be if you can't get tyres for a 26er anymore.
