I intend taking the road bike too and would rather not be carrying a ton of water up the Joux Plan.

Never found it to be a major concern. Every tiny village has a fountain with drinking water where you can fill up.

Hoping to find ones outside villages - in my current unfit state Joux Plan from Samoens will take about 3 hours so I may need water half way up ! Will be carrying 2x 1 litre bottles on bike.

It's less than 12k. It would be an easy walk in 3 hours. I think the record is 33 minutes. 1 bottle an hour on average. None of the villages are more than 2 hours apart.
