Easy enough or a job left to the pros?
Don't it for a couple of people. Easy enough if you're halfway mechanically aware. Easy to drop a bollock if you're not though.
As onza said . I've you are familiar with helicoiling it's not an issue.
I bought a cheap eBay kit and followed the instructions. Wasn't hard at all. Just don't drill into the fork leg. Mark the drill bit with some tape or something.
And this is why IS mounts on frames/forks with adaptors and post mount calipers is s much better solution for the real world. All the threads are inside a £5 piece of aluminium.

I've done a pair of 36's. Take your time and read the instructions. Very odd taking a drill to a £1000 fork yet strangely satisfying when tightening up your brakes afterwards!
It's a one shot deal and if it goes wrong it'll probably go as wrong as it's possible for it to go wrong. But equally it's not difficult. I haven't done a fork, have done a frame though and that was harder- terrible access to the brake mount.
Up to you really, if your skills and confidence cover it. I don't know if this applies here but I've been answering this question a lot on a 3d printing group I'm on and the thing I always say is that yes it's basically straightforward, but then so is putting bolts into threaded holes without destroying them and needing to fit a helicoil. The skillsets cross over a bit so every time I see an experienced spannerist tell some dobber who can't operate an allen key that it's easy to fix their carnage, I think maybe no 🙂
