How about a couple of washers & a qr skewer through ctr of axle?
you could just "hang" the wheel off the QR skewer, or maybe get some bits of wood/plaggy/whatever that are the right diameter to fit, drill centres and shove 'em into each side. (If your hub has no central "tube" for the axle you might get some tubing to go through first and then pack that)

+1. If you look at the park tool TS2 extension kit, its just a couple of curved washers that press into the sides of the bolt thru axle. rear QR, couple of big washers.
QR -> stand -> washer -> wheel -> washer -> QR nut
the axle doesn;t have to be central on the QR for the truing to work, it just needs to be held so that it doesn't move when spinning
