Has anyone had old cranksets re-anodized, and is it financially viable? (eg XT crankset)

Yes. Costs about £30. You will need to have them polished for a good finish. Whether it's worth it is up to you.

If its the newer style with the steel axle(Hollowtech), Pretty sure it cant be done

I seem to remember a chap in the States (Ceramicoat or something) doing a ceramic coating to order for ~$50. It was a lot tougher than anodizing.

I was going to take a look into it, as I've a couple of pairs of tatty but perfectly serviceable HTII cranks.

yes, especially if its bling like Grafton. XT? Hmmm maybe not but the choice is yours.
