Anybody know which speed chain you should use with an 8-speed alfine?

I am presuming 8 spd and not 9 spd required?

You can run a 9 speed chain on an Alfine, but I'd recommend an 8 speed chain personally. Usually cheaper, and almost always stronger.

FWIW I don't recommend using a specific 1/8th inch SS chain, the Alfine cog is designed for 3/32" chains and from my experience the slackness of the chain on the cog results in it being thrown off the cog way too easily. Or maybe it was just the POS SRAM PC1 I ran on it for a bit. Anyway, replaced with a cheapo 8spd KMC chain and fixed all my problems.

Highly likely. A few years back I was having frequent chain breakages on my SS. Stopped using SRAM chains & problem went away.

I use a SS chain but have used a 9 speed

I use the same chain as do on my singlespeeds - KMC Z610HX.

I think it's an excellent chain.

Surely it depends on which width the chainwheels are?

the trouble is getting an 11 speed chain for the 11speed hub...

I'm running a 9 speed, mainly because I can use a powerlink easily (I find the 8 speed equivalent a faff and a half). No problems yet.

I use sram 9 sp chains. simply so all my bikes run on the same chains so the powerlinks and spare links I carry will work.

I believe you can use a 1/8" Sprocket with the Alfine hubs? That plus a decent KMC chain and 1/8" chainring would be bob on (IMO)...

Have a look at the rustbuster KMC single-speed and 7-speed chains at CRC for approx £7.
Either will work with a 3/32" chainring and sprocket, but the 7-speed is lighter due to the cut-away links.
