Want to put some road tyres on 18mm wide 29er rims to do some fast touring.

Whats a good size to look for?

Also

What minimum size road tyres can i get away with (I do have some 23mm gatorskins already but i think that might be pushing it)?

Is this a question about 700c tyres? sometimes known as 28" or 622mm etrto.

Think that 23s would be pushing it - I wouldn't go narrower than 28s

I have some 29'' WTB Dual Duty rims which are 17mm wide. I have comfortably run 25mm tyres & 23mm tyres.

They are now running 35mm WTB Cross tyres which give a happy medium (for me) between speed and traction.

I asked the reverse of your question a few week ago about the largest off road tyre I could fit to a 17mm rim ๐Ÿ™‚

I run XR470 DT rims that i think were 18-19mm with Conti Gators 700x28, they have been fine, but you need to be really careful pumping them up and make sure the bead is seated, ive blown up 2 inner tubes now where the bead has popped off, makes a bang like a gun going off. One time the tire popped off after a normal ride with bike sat in the living room. Must have hit a small pot hole. Rims are as new with no dings. With the 28mm tyres they sit in a perfect U shape on the rim at 100psi, i wouldn't want to go any smaller

Dont seem to be excessive loose, it was also linked to one tyres as i moved it front to rear and the problem followed, so i may have been a slightly off tolerance tyre. I would add these are the only problems in 2 years of commuting up to 150km a week all year
