70mm stem great for the downs but washes out in corners, 90mm stem sticks the corners but not as confidence inspiring on the steep stuff, how do you set up yours?

Why don't you try 80 then?
I set mine up more to do with reach.
The shorter the stem then the twicher it'll feel - but can be balanced by using a wider bar.
