So....do all 10 speed chains work with all 10 speed drive trains?

Basically... Yes.
Shimano do do road and MTB chains, but they're cross compatible.

I've used KMC, Shimano, Mavic and Connex on 10 (and 9) speed setups and they've all been fine*
*except the Connex quicklink jumps on a 11t sprocket as it's too wide so you need to use a KMC one instead.
