The OEM one on my X-Cal is eating into the alloy freehub of my wheels where it is made up of 5 or 6 sprockets on a carrier and then the rest as individual cogs. Which replacements come with a full carrier?

None! XT carrier only covers 6 sprockets, XTR is no better and neither is xx.
Suggest you live with a bit of gouging!
The closest you'll get is XX, which will cost more than your freehub, making it a false economy.
No cassette exists with all sprockets on a carrier, be in 8, 9 or 10 speed.
What's easier is to MTFU, as it doesn't really matter!
it did when I nearly couldn't get the sprockets off last night.
Have filed the burrs down, will make it a routine task in future.
2 chain whips, or screwdriver to get them off, and yes file them down if they're really bad.
Keep your cassette tight too.
Yeah 2 whips are better than 1. Those of us with Pro2's are used to the issue!

It's not a new issue, it's just that Pro 2s brought alu freehub bodies to the masses! I've been doing it on 240s, Tunes, Chris King etc for more than 10 years!
Shimano tried to get around it with the early Dura Ace 10 speed 7800 hubs/cassettes, which had much deeper splines, there was a pushback from the industry though as it meant that their wheels couldn't be used with 9 speed. Shame really, now 10 speed is as good as universal (on the road at least) maybe they should try again. Can't remember if 7900 has the requisite deeper splines.
Hope are great, i agree, but i don't think even they will stand me a new freehub in this case. As it's a superstar hub.......
Get a steel freehub body. Then start a thread as to why your wheels are so heavy ๐

I wonder if XX1 will get a better design seeing as they're re-designing it anyway? Strikes me as odd that roadies don't use a 9-20 rather than 11-23 that's mean they could save weight on the front chainrings too and still get the same gears.
it happens on steel freehub bodies as well just to a lesser extent!
do they have a disclaimer about them not really being fit for purpose? i suppose they designate it a consumable item - like brake pads and tyres?

Roadies will resist the 9T sprocket as even the 11T is inefficient.
Shimano funded some real mech eng research a few years ago and it was found derailleur gears vary from 90 to approx 97% efficient.
It is rather complex and I do not wish to over-simplify, but small sprockets put a huge angle on the chain which creates friction which is effort lost as heat instead of motive power.
