    Just emptied the fridge and it seems a bag of chillis has been bought on each shopping trip for the past month and hidden at the back of the fridge. Any good ideas what to do / make with them?

    Chilli jam.

    No, really.

    Get a load of chillies. Remove the stalk and seeds. Chop finely (e.g. blender).

    Bring to boil with a little water and a lot of sugar.

    Leave on a gentle simmer for about half an hour till it goes jam-like. Pour into a suitable container and leave in fridge.

    Eat with Green Chicken Curry. Delicious.

    More sugar = less spicy.

    EDIT: a small amount of fish sauce wouldn’t go amiss.

    Rub them on your fingers and very carefully knock one out. The danger will heighten the sensations.

    Rub them on your fingers and see if the missus still fancies you. She doesn’t if she’s quiet.

    make sure jam is set before putting in a jar. put a wee dollop on a cold saucer and slide finger into it from side – if set it should wrinkle.

    really must make some more…
