So my housemate brought home around 8kg of bananas last night from a schools sports trip. Freezer is full, so i need a way to make them into something that will last longer than a banana. Any ideas?

you can freeze banana loaf and it defrosts fine.

4 nanas per cake.
10 oz caster sugar
9 oz self raising flower
2 eggs
1 tablespoon warm water
4oz butter
half tea spoon salt
half tea spoon bicarbs
liberal splash of vanilla extract

whizz it all up and just chuck it in lined tray bake on gas mark 4 or 5 for about 50 mins if you make it in to 1 giant loaf or less time for smaller tins. check its cooked with a skewer, poike in middle if it comes out clean its cooked.

Often these folks are very fussy about what food they will accept. I used to run a sandwich business, at the end of the day I’d try to take my unsold sarnies to donate. They couldn’t take them
