FC sites almost always have grading signs which explain exactly what the gradings mean 😕 What happens at a centre with no black, or no green, or only one grade?

As stated it's centre specific, but always in the same order of severity.

Most good centres will have a map and features marked on them stating rock sections, steep/hard climbs, technical sections, with an additional mention of what type of technical feature, ie, steps/drops/boardwalk, etc…..

I'd say swinley or thetford would give a good introduction to off road cycling, or come to the quantocks for a more scenic and intense experience…..

LLandegla is clearly one of the smoothest yet entertaining trail centres, which will provide a bigger smile the faster they choose to ride, with short loops they can do them several times and gradually get faster and faster, till they are gagging for something a little more challenging.
