    I love homemade pita bread (you can’t buy shop bought ones in my little corner of France, and even if you could the one’s Tesco sell in the UK are awful). So I make my own. But only about 50% of them become “pockets”. I’ve tried so many recipes for flat breads but none seem to give a better return.

    So I turn to STW, someone must know, Jamie O and Gordon R a crap.

    Flour, water, salt.

    Hot pan + flour.

    Getting the pocket is a combination of getting the thickness just so, and the pan hot (it needs to cook the crust while the inside is still steamy).

    Pizza stone in the oven works well too if you can get the oven hot enough (250-260C, no fan)

    the crappy tesco ones, wrap them in soaking wet grease proof paper, hot oven jobs a goodun.
