I’m on the hunt for a really sharp cheese, full of twang and crystals have tried a few good aged cheddars but wondered what the best you’ve tried is? Really, really, really sharp!

What do you mean by sharp?

My favourite at the moment is Waitrose award winning Cornish Blue.

I’m not a huge fan of excessively sharp Cheddars, there’s far better ones with depth of taste and subtlety.

I did try some sharp cheese before but cannot remember which one now …

Dairy Lea Triangles they have quite a point on them.

Tried those but they aren’t up to snuff OK but not aged enough.

Anything unpasteurised. Lincoln Poacher’s not bad.

Another vote for Black Bomber, a cracking Cheddar with masses of flavour. Or any Booths local cheddar or a crumbly Lancashire, which has a super sharp yet creamy flavour.

See, I wouldn’t call Poacher sharp. It’s delicious, with oodles of depth and subtlety, but it’s not super mature sharp like the Bomber for example

(don’t get me wrong, I’d buy Poacher over Bomber any day of the week and if you haven’t tried it then do)

mmmmmm, 2nd that Cornish Blue. Not particularly sharp, just lovely.

Absolutely outstanding shop that was just a total joy to be in. Give them a call or just order online. Every Christmas I would d blow about 70 quid on cheese there and man oh man it was the best thing about the Christmas hols.

Isle of Mull cheddar is a good one, and here in Sweden we have västerbottenost , which can be very crystaly and sharp.

Was going to say Isle of Mull cheddar. Always used to come back from visit to Mull with a way too much 🙂

I used to live round the corner from the Highbury La Fromagerie. I could easily blow half my shopping budget in there.

Used to like Black Bomber cheese a lot, but now actually find Sainsbury’s Extra mature cheddar is very good, and has sort of ruined Black Bomber for me. It’s better if left for a few weeks before starting, becomes more crumbly and the flavour intensifies.

Mrs froze one block, it was virtually un-sliceable, but the flavour was excellent.

@BiIIMC me too, right next to highbury fields. Godfreys butchers as well, great place. Used to see Nigel Slater in there alot
