At the moment I have Sram brakes and shifters on my Enduro. They are attached to the bars with one mount. If I wanted to fit XT brakes can I mount the shifters to them and if so what do I need or do I need new mounts for my shifters

The latter. You’ll need two of these, although I’m sure you’ll find them cheaper on ebay

I had some mismatch about a year ago. Lovely things but at the time they didn’t work with ispec-b. Glad to see they have caught up.
