OK, so my take on it. Even if he'd been rescued he'd have lost his arm. Therefore the hacking should have been done on the first day*

Usually a bahco laplander in my camelbak... Way faster than your feeble pen-knives, though I reckon bone is probably more like hardwood than soft so it'll probably make a pretty unprofessional cut.

I was fine until he had to cut the nerve. That was a proper full body cringe.
I like to carry a dremel with a selection blades. If you didn't use up all the battery one trying to grind away at the boulder, it would cut though your arm in a jiffy.
