No I have still got two bikes with 8 speed.

@flap_jack – sorry mate – mine's 3×7, making it mega-ultra-niche.
I probably don't use the smallest 2 on the cassette either…

3×7?Hmmm, let me think. That's 3 sprockets lighter,but only 1 granny heavier than a 2×10, and you have less dish on the rear wheel,a wider/stronger chain and one more gear.Naaaah, it'll never catch on.
Still on 3×8 here, never saw the point of paying more for an extra gear I don't really want, only went 8sp because better quality/longer lasting 7sp stuff was withdrawn.

3×8 is on my best bike ! Got 3×7 and 3×6 too.

My MTB-road conversion has 3×7 shimano. I have an 8 speed SRAM system in a tin in case I need it. My GF has 3×8 Shimano. But my MTBs are currently 2×9 and 1×1.

My road bike is 1×5 🙂

I think 3×7 was great, never had to change chains or anything. I'd think about going for 3×8 next time I need to renew if it lasted as long. Theres gears on that 3×9 I never go near.
