    so getting ready for a night away and putting on my new panniers as I cant get my stuff into seatpack. Question is, I have enough to 2/3 fill one pannier (Ortlieb back roller plus) – is the bike going to feel unbalanced with just one one, should I split the stuff between 2 so it’s weight balanced ?

    You won’t notice. Just check the rack bolts are nice and tight.

    One’s OK if it doesn’t weigh much. If it does, I’d use two. (from my limited experience)

    Just take the one, Ortliebs are heavy, no need to add weight. You’ll adjust in the first mile or two, probably without noticing.

    If you ride no hands a lot then go for two, if you don’t go for one.

    I usually use two just for balance… when I commuted, used only one and that was fine as well.
