On a 240S QR disk hub. Any tips before I set about this. I'm happy enough with the Hope 'hit it with a mallet' style of bearing replacement but the DT website seems to indicate that I may need special tools 🙁

You will need a ring drive removal tool.

Black tool at the bottom. Its £60 though.

Nope, and they are usually ferkin' tight those ring drives, nearly removed a vice from the bench getting one of those out.

You wont do it without the removal tool for the inner cog.
I took mine to local lbs and used there tool. With the tool in a vice you fit wheel over it and unscrew. Sounds easy but when I say unscrew I mean spoke breaking pressure, as the cog had some locktite on mine. Also dont fit Superstar ceramic bearings as they are a tad wider than originals and the outer seal catches the cassette when fitted into dropouts.
