Cooking for 6 tonight, planning a lasagne but wondering if there’s something lazy (without looking lazy) I can try.

    Any suggestions?

Sausages with a big dish of garlic roasted veggies (tomatoes, carrots peppers, butternut squash, onions, courgettes) and feta cheese.

    That’s what we’re having anyway.

    Fry lardons until crispy remove
Fry ted onion and courgette add lardons back in dollop of cremfraiche and some wholegrain mustard and parmesan

Cook some gnochi and dump in to the concoction when done.

    10 minutes
    Tastes brilliant
Looks good (cut your courgette into long wedges.

Spanish style fish stew: fry onions, celery, garlic, throw in some chopped up chorizo (improves any dish) and fry thru to release the porky paprika goodness. Chuck in a tin of chick peas and a tin of tomatoes and your spices of choice (paprika & cumin are always good). Simmer for 20mins
Chop up fish and throw in for last 5 mins to heat thru. Serve with garlic ciabatta
Easy, filling and looks pretty good

Having made this 3 times already I still struggle not eating the whole thing in one sitting by myself, YMMV. You’d need to increase the amount of ingredients for 6.

An oldie but very goodie is a chicken chasseur – I did it recently (using the linked recipe) – it was lovely and very easy to cook.

So easy to cater for veggies and meat-eaters, healthy, tasty. A doddle to make, even I am capable! 😆

For a sit down meal, mini-griddles work well to keep the heated food warm and then everyone makes their own as they go. Or lay all the ingredients on the kitchen worktops and form a rotating queue to your quota together.

Jerk chicken with rice and peas

marinade chicken thighs in jerk seasoning, mango chutney and coconut milk for an hour or two. in a cast iron pot place rice and kidney beans, pour over the spicy coconut milk stock. place chicken on top and places a few dollops of mango chutney on top of the thighs. put on lid and bung in the oven for an hour.
serve with a side salad (window dressing) and bread

Plus it makes eating a bit more social with big communal pots of stuff in the middle of the table.

Always much more fun if the guests get involved in the process so i suggest you boil the kettle and get 6 pot noodles. Put an extra bowl out for the guests car keys for a game of hole roulette!!!

    Plenty of roast chicken wings.

Once cooked all you need to do is brush some Nando’s piri piri sauce on it.

    Serve.
