    Hey guys and girls

    One of many countless days of boredom between over the summer break before uni starts again…

    Carrot cake…what are you tips/ best recipes for a mouth watering example?

    Courtesy of Buenas Migas, this great place in Barcelona on the seafront, particularly good for carrot cake:-

    Ingredients

    275g plain flour

    1 teaspoon salt

    3 teaspoons cinnamon

    1 teaspoon baking powder

    2 teaspoons bicarbonate of soda

    4 eggs

    400g caster sugar

    350ml vegetable oil

    375g grated carrots

    125g chopped walnuts (optional)

    200g sultanas (optional)

    Preparation method
    1.
    Preheat the oven to 160 C / gas 3. Lightly grease and flour a 20cm cake tin.

    2.
    In a large bowl, combine flour, salt, cinnamon, baking powder and bicarbonate of soda.

    3.
    In a large mixing bowl cream together eggs and sugar. Add oil.

    4.
    Slowly add dry ingredients and blend together well. Add carrots, walnuts and sultanas.

    5.
    Pour into cake tin and bake for 35-45 minutes. Check after the first 35 minutes, to see if a skewer inserted into the centre of the cake comes out clean. If not, continue to cook, checking every 5 minutes.

    6.
    Top with a cream cheese icing and enjoy.

    Just follow this Hummingbird Bakery recipe is fecken ace, and it never, I mean NEVER fails, to be a great cake (oh and split the recipe into 2/3’s, as it a three layer cake – trust me 2 layers is fine):

    Sorry doesn’t look hughely appertising, as it’s been half scoffed already, but you get this without trying…

    Leave the carrot out, add chocolate.

    Carrots belong in Shepherds Pie, not cake.

    I concur that the above is better if you substitute bananas (overripe). More moist. Also put in 10x as much cinnamon if poss.

    SC & JHW, your so wrong, carrot cake is fricken ace, duuuuuuuuuuuude.

    Though JHW, Banana loaf or muffins, yes I’m down with that too..

    Try this recipe, I made a load for an Archery competition and was asked when I would make them again! The orange zest gives a zesty lift 😉

    I’ve heard good things about the white room’s.

    Seems to be quite a community of carrot cake connoiseurs on here 🙂 The key thing is plenty of cinnamon!

    Carrot cake needs a bit of pineapple IMHO. I know it sounds just wrong, but the pineapple adds a welcome bit of moisture as well as sweetness.

    Eh? Carrots have all the moisture you need and more… Most recipes recommend squeezing out the excess moisture from the grated carrots before using them.

    Not that it not a good idea, but my g/f would kill you for suggesting it (the one thing she hates food wise, would ruin it for her)
