I currently have a Macbook 2.1, 2GHz dual core with a 12" screen and 1gb ram and OSX 10.4.11. It's getting very tatty, the screen flickers sometines and I find it too small to use for Photoshop, so I'm thinking of retiring it for use as a music server and buying a newer Macbook with a larger screen. At what point do Macbooks improve in terms of construction (the plastics on this one have always been fragile) and what is the minimum spec to look for to run CS5(I already have this on my iMac but that's packed away due to my post divorce accommodation issues) ? Is a 15" screen big enough ?

I just bought an older white macbook for the missus, I think its a 13" 4,1 with 120 GB HDD, 4 GB RAM, and Core Duo 2.2Ghz

Its great although wont run mountain lion, but runs lion fine, and she is using it for photo editing with CS4 with no issues. It was mega cheap too, only £280 off gumtree, guy had just had the palm rest area and keyboard replaced by apple under warranty, so it looks as good as new.

I have an MBP 13" and use Aperture with an external monitor, and its perfect, havent tried the old MB with that setup yet, as havent had time. But there are defo bargains to be had, and the old MB sounds like it would do the job for you.

We've got one of the earliest unibody MacBooks. Just a C2D 2.0, but it runs mountain lion just fine. It's a very worthwhile upgrade from lion in my opinion.
Any unibody would be a good start. The early ones are easiest to upgrade as well; ram, HD & battery.

End of 2008 is when the unibodies came out.
