...and trim them to fit the various shoes you wear - I’ve got three pairs, one for work boots, one for running trainers and one for, well, I haven’t decided yet.
Possibly stupid question...
Anyway, do I just insert them into the shoes or take the existing insoles out of the shoes and replace with the new ones? 😬

Put them on top of the original ones.
Extra half inch. 😉
That aside, they'd usually replace the stock ones, unless you need to reduce the volume of the shoe for fit.
