My partner and me have both just upgraded from iPhone 3 and iPhone 4 to iPhone 4S.
Shiny packets have just arrived in the post!
Concerns over retaining information such as contacts, notes, even text history and of course apps after upgrade. My partner does not sync her phone with her laptop but I have an Apple Mac and iPad which all sync with each other.
What do we need to do before SIM card transfer to ensure we do not anything?
Quite simple really, back up phone on iTunes, remove SIM then restore onto new phone

It is that simple.
Would still recommend that you do something like have your contacts/email/calendar etc. synchronised with gmail.
If you make full backups (with passwords) in iTunes then use them to restore the new phones then you'll basically not notice the difference. It keeps everything, including little things like SMS history and your spell checker dictionary.

I did it via iTunes in the end due to forgetting iCloud password and being impatient in sorting that out. I lost some text history, had some old apps return which I deleted and don't seem to have all calendar info in phone.
