Ok,so it's almost February and it'll be pancake day aka Shrove Tuesday on the 28th 🙂 Any decent recipes amongst STWs that you'd like to share, favourite topping(s), tossing tips?

We have Scotch/American pancakes for Sunday breakfast nearly every weekend. The kids love honey on theirs , the missus and me like banana/Greek yoghurt and maple syrup.

For traditional pancakes left over bolognese or chilli is a nice filling or cheese and jam.

There's barely a weekend that micro and nano bits don't demand pancakes for breakfast - normally with maple syrup and if I'm going out on the bike a good nob of butter as well. Delicious!

I'm no expert on tossing, but I reckon those who only toss once a year may find things quickly get messy and it could all be over in a in just two shakes.With not much to show for their efforts.
On the other hand those who toss regularly may find they can go for a long time without making a mess. They could end up producing quite a load

TiRed's pancake recipe in full...

200g plain flour
400 ml semi skimmed milk
20g sugar
3 eggs
Splash of vegetable oil
Teaspoon of vanilla essence
Teaspoon of orange essence

Toppings/fillings are Parma ham, cheese, Belgian chocolate flakes. Lemon juice and maple syrup are also staples.

For American, use 200ml milk and a decent tablespoon of baking soda, cook three to a pan.

Tefal's 9" crepe pan, preferable two at a time, with a little oil and a wipe. Medium heat, the above recipe will make about 12 pancakes. For a smooth mixture, sieve before using, and use one medium ladle per pancake. I never toss them, I use a crepe spatula to turn them

I make them at least once a week and have cooked up to 50 at a sitting.

thick drop scone batter* add chocolate chips to it about 1/4 inch deep in full pan
The chips melt as it cooks yummy. every saturday that is breakfast.

Canadian pancakes (separate the eggs and whip the whites first), ice cream and maple syrup.

Pancakes are a fairly regular occurence in our house, particularly as a second breakfast after an early ride or surf. My personal favourite is banana pancakes. slice bannana thinly, butter in pan, banana in pan and space out slices evenly, allow to cook slightly, ad batter to the same thickness as banana slice, cook as per normal pancake. Good with runny honey or lemon/lime and sugar (prefer lime myself).

however I do like a good smoked ham and Gruyère one with a pinch of spicy paprika
