With the number of "allowed words" and how offensive some of them are - I get a warning for supposedly "attempting to evade the swear filter" when it was automatically *** out, yet the new software bounces any replies to the moderator email that you send now.

I've only just seen this. In answer to your question, wordpress@singletrackworld.com isn't a valid email address, which is why it bounced. moderator@ is what you require. (The "reply-to" field on warnings is incorrect, this is on the buglist.)
