So what are the wall covering options? pros and cons, are they cheaper, more expensive, easy to find fitters etc?

Recently posed the same question to a plumber - probably obvious, but Recopanel = cheaper installation, more expensive materials. I was considering using it for the shower end of our ensuite, and just skim the rest of it and paint it in something nice and mildew/mould/water resistant. It looked attractive as a concealed shower was going to be behind it, and I could have got the shower sorted (the big problem) by the pro and fixed the rest of the room at my leisure.
If tiles have to come off, he said we should budget for the cost of a skim anyway, possibly new plasterboard work. I'd tile it myself then though.. you could probably tile over too, but I think it would bug me.
Think it comes down to how much of the work you are doing, and whether you consider your labour effectively free or not.
