Want to be able to facetime Mrs zip's mum during lockdown.
O2 advertise an iPad SIM. Will a normal PAYG SIM card that you get from the sweet shop work?

Yes, I've got a bog-standard Three PAYG SIM in my iPad.
I assume that O2 mean it's a data-only SIM but it doesn't really matter.

Yeah they’re a bog sim but you can just tether off your current phone.

Just use your phone as a hotspot* and connect the iPad via that if wifi isn't available.
*Assuming you have enough data allowance.
