Thinking of taking the bike down there next week if the weather stays okay.

Are there any recommended loops/not to be missed roads anyone can suggest?
Also, how hilly is the area?

Depends on where you're going to be based.
I used to live in Fishguard and know a few routes: a nice short loop is from Fishguard to St Davids and back on the coast road or a longer version up into the Preseli's and round towards Puncheston, Mathry and then back to Goodwick/Fishguard on the coast road again. Alternatively head into the Gwaun Valley, get pissed at Bessies and eat loads of the best cheese money can buy at Pant Mawr in Rosebush.
You can always go into Mikes Bikes in Prendegast, Haverfordwest and ask as IIRC they have maps with the tour of pembs etc on.
