Tidying up our joint finances, me and partner were looking to add my name to her mortgage and create a declaration of trust with our solicitor.

We started the remortgage process in July, yesterday after a lot of stress and phonecalls found out that the mortgage provider will not provide our solicitor with a mortgage offer letter as they are listed on their system as introducer.

Our choice of solicitor was discussed and approved by the mortgage advisor (an employee of the mortgage provider), alarm bells first sounded as we got a letter from a solicitor in Manchester, advising that they had been instructed to act on their behalf.

Things have gone round in circles for the past couple of months until we found out the reason yesterday.

We are now at the point where all the work and cost of the application has been for nothing.

I am writing an actual complaint letter to the mortgage provider, but what would be a reasonable expectation for resolution?
Recompense of all solicitors and mortgage fees, plus cost of calls, time, compensation?

You may get the fees back but very much doubt they will compensate your time.

I would most certainly copy the financial ombudsman in on your letter as they will be the ones to help with upholding your grievances.
