What would be the cheapest way to record/store the images?

get hold of an old VCR - maybe a specific CCTV one. Or a cheap PVR type thing so you can transfer to a PC etc.
I would also look at an IP camera as it can email you clips or save to built in SD card or a storage device on your network. The record will trigger on sensing movement.
