I'm in the mood to watch a bike is born style show - anyone know of any online, amateur, documentaries or shows?

Have a look for Sid Leitch on youtube , dig about and you will find some real stuff - not long shows but interesting snippets .

Robert Penn's 'It's all about the bike" (iirc) was out on mainstream tv, he went round the world getting all the bits for his custom build- cinelli and campag factories, some wheelbuilder in california, brooks factory etc. I enjoyed it.

Not sure if you're only looking at bikes, but the BBC2 How to Build series was interesting (most of the time).
