Right, I've seen a sauce, mustardy creamy tarragon thingy that I want to try, what to cook it with?

No meat, I'm afraid.

Definitely mushrooms: oyster or porcini if you can get them. The only food that makes me think about cheating on meat......

Yup, Asparagus, but blanched then charred on a dry griddle.

Griddled sweetcorn goes with tarragon..... and i would have some pork chops with that too
