Currently decorating my hall, stairs and landing and am going to replace my old and tired white plastic light switches and plug sockets with nice metal ones. In the hall I have two double light switches - one switches the hall light and the upstairs landing light, and the other switches the hall light and the outside light (the only switch that switches the outside light). I presume I need two 2-gang 2-way switches?

Yes two off 2 gang 2 way will cover it. The outside light will only need a 1 way switch but you can just leave the third terminal on that switch empty.
