Its not a Ebay transaction and its enough money to warrant worry.
What protection etc to both parties have? I.e me incase he decides on a false chargeback (?)

An invoice is just a request for payment detailing what you are selling and how much you want for it. This directs the sale trough PayPal as purchase of goods rather than any kind of gift payment. I have received a few of these from eBay sellers when for example I have bought multiple things from them I.e 4 chairs @ £60 a chair. The invoice side is more a business thing.
