Any recommendations for a comfortable stopover on the drive down that way (from the tunnel obvs). TIA

Fontainebleau. Gets you past Paris. There's a Novotel that's right next to the forest. Other accomodation available if motels are not your bag.

Thanks - 'other accomodation' probably more interesting than corporate motel, but will take a look around the area.

Reims is a nice option. Plenty of motels just off the motorway or it's a nice old town in the middle with good bars and restaurants if you want a bit more. Worth swinging by the F1 race track if you have time. Semi derelict but being restored. It's a good place to eat a takeaway or some breakfast croissants.

Depends on how long you intend driving before stopping, really. And how far from the autoroute you’ll travel.

I like Bergues for a break just after landing, and on other occasions we’ve stopped variously in Reims, Langres, Chaumont (hotel des Remparts was nice 18 years ago) and just gone straight through to Grenoble.

ibis budget Troyes Est

A bit cheap but then it was fairly cheap, about 2kms off the autoroute, for me it was almost exactly half way, a choice of chain type restaurants within a 200m and a large supermarket for buying cheap fuel to get you the rest of the way.

2nd Reims / Champagne region

. Early morning crossing you'll be there by lunchtime. Enjoy a lunch, stroll (the cathedral is incredible), champagne tour etc before continuing the journey.

I recommend L'alambic for dinner in Reims.

Early morning crossing you'll be in Grenoble for tea time sticking to speed limits. It's about 8 hours.

If I was driving from Calais to Grenoble I wouldn't be going near Paris unless I had a good reason to. Reims -> Troyes -> Dijon -> Macon -> Lyon -> Grenoble. As Edukator says, pretty doable in a day, even without thrashing it. Stop in Beaune for some lunch if you want a nice break and stroll.
