I'm fitting a series of seven 120W halogen lights up in the gallery space. Can I wire them all off a single 1.5mm twin and earth feed? At the moment I'm wiring them in pairs from a junction box.

There are some other issues around running the cable thorugh insulation etc (i.e. so that heat cannot dissipate) but for 7x120=840W then that's sufficiently below the 3.6kW rating for 1.5mm2 that you'll be fine.
