Nigellas banana muffin recipe is good, available on-line.
Tipsy apple muffins (uses advocaat in the mix).
Apple streusel muffins from Delia are good.
BBC Good Food site has some good breakfast muffin recipes.

Can you tell what I did when un-employed?

I made a batch of Bilberry Muffins last Thursday, using Cannock Chase bilberries, based on [url= http://www.bbc.co.uk/food/recipes/blueberrymuffins_67846 ]this recipe[/url] . . .

. . . followed by another batch on Friday using Macc Forest bilberries, and another batch on Saturday using Rivington bilberries

(The bilberries on Charity Lane are fantastic at the moment 😀 )

Not my recipe, borrowed from a friend of a friend... Only annoying thing is the use of cups as measurements - bloody silly idea!

The Best Chocolate Muffins Ever

1¼ cup
¾ cup
1/3 cup
½ tsp
¼ tsp
2/3 cup
¼ cup
60g
1
1 tsp
1/3 cup

Plain Flour
Sugar (caster is better than granulated)
Cocoa (I use Green & Blacks Organic)
Bicarb. of soda
Salt
Buttermilk
Oil
melted butter
Egg
Vanilla essence
Chocolate chips


In a large bowl mix together flour, sugar, cocoa, bicarb. of soda and salt.
In a separate bowl mix together buttermilk, oil, butter, egg and vanilla until
well combined.
Make a well in the centre of the dry ingredients and add buttermilk mixture.
Stir to combine then add chocolate chips.
Spoon batter into muffin cases (normally takes 12 silicone moulds)
Bake at 190°C for 20 minutes.

Edit : copy & paste seems to have screwed up the formatting. Oh well, sure you can work it out!

Recipe actually makes about 15 muffins, and excessive amounts if icing. They were really good. Have I mentioned they were quite good enough?
