As title moving in January, quite happy with my three year old LG g2. Can I just get a SIM only for it over there or is there or is it a whole new world of incompatibility?
Just get a new sim. We bought one when holidaying over there and it worked fine. All very easy
Yep sim only is fine. Telstra if your out in the country, if not Optus is cheaper and faster in a lot of ways in the city. Don't bother with Vodafone.

Health insurance is worth having, if you have UK based private see if they can give you a letter confirming coverage as it will attract a discount.
Banking is a bit backwards on some stuff, card fees exist so getting cash out of the wrong machine costs you. Eastern states ANZ has good cash machine coverage and decent online stuff.
Drivers licence is a quick swap over and do it before you need car insurance as it will make it cheaper.
If your renting it's generally much better than the UK but expect to pay for carpet cleaning at the end of your stay.
Get your medicare card sorted when you arrive as it's useful for ID points when doing other things
