I was lucky enough to stick my head into the rejected stilton storeroom at a creamery, it was an interesting smell. I've had cheese in the fridge for several months and it's been fantastic. There was a story at the creamery I worked about the builders who hid a 20kg block of cheese in the roof space thety were working, but didn't have the opportunity to get it to the van. It was discovered some years later and proclaimed to have been one of the best cheeses ever produced there!!

I'm just hoping "Strangly" is a typo and not an adjective.

Well, with supermarket stilton you have to keep it for months after you buy it before it actually tastes any stronger that dairylea.
