iOS 7 will be out later this year and has better photo organising as part of it apparently.

I've been having a wee play with the new ios photo app.
Two ways of viewing- by all photos, under date headings, or by album (there's a few defaults - camera roll, imports, events, or user defined. Of the albums, only the events seems to display date info. No tagging unless you count albums as tagging.
biggest changes seem to be to make sharing pictures easier.
All a bit meh wrt to organising. Wouldn't hold my breath.
