(presuming its possible) How does one go about getting just a couple of albums in iCloud backed up to iCloud?

It's my understanding that it's the entire camera roll or nothing. Specific albums cannot be uploaded.
You could download the album photos to the device then copy them to an iCloud / Files folder. Or save the photo direct to Files. Bypassing the Photos App and iCloud camera roll backup.
