My 2 cats are getting old and sick. They eat their body weight daily and barely make it to the garden to unload, which they do, a lot.

Imagined illness, take him to vet, don't bring him home. Vet said kidney failure and not fair to keep him...
Little spray bottle with water, spritz him if he even looks at the stairs the wrong way.
Eventually you can just make a hissing noise and he will crap himself.

Put some offcut of carpet down in the same place for him to scratch at. It's normally a territorial/anxiety thing, TBH. Maybe Feliway?

i have some carpet off-cuts from when the new carpet was fitted, and have laid one over the carpet to protect the stair the cat wants to destroy. Seems to be working.
Yep, as suggested you will struggle to stop it unless you do something like spraying with water every time you catch the little sod doing it. But, that might lead to anxiety & you'll find it happens more in other places.
Other things to do - proper scratching mat/scratching post/carpet off-cut in the area getting scratched, or try some feliway.
We have a cat that scratches at the carpet & my Wife currently wants to re-decorate the hall, stairs & landing. I am loath to fork out on new carpet, only for the turd of a cat to shred it in weeks. I am not sure I can put-off the decorating until the cat dies though.

i think you can both act like adults with this. Just sit it down and explain why you're upset by it's behaviour and agree a compromise. I find that most problems in life can be resolved with a bit of calm communication, understanding and compromise. If that doesn't work refer to the brick and pillowcase option.
Ours sort of does this - 19 years old but still very sprightly but a bit needy. Across the flat most quiet corners little grooves where she has 'tickled' the carpet. No damage to speak of - disappears when you vacuum.
If he's old and does not get out much he's probably not getting much action to keep them trim. Take him to the vet and have his claws cut proper short. Our very cuts them way shorter than I have the confidence too. I'm too woried about catching the quick to do more than take the tips off. Our cat's claws are now so short and blunt she could not damage anything.
Get the cat a scratch pad that is more attractive than the carpet. It's in their nature to scratch at things, you will never stop it.
If that doesn't work, decide whether you prefer to keep the carpet or the cat and get rid of one of them.
