Does such a thing exist (that won’t burn the house down)?  Thinking 30 to 40 amps or more if they do them.

Legrande (Netatmo) make such thing to fire up electric boilers.

Do you want a switch or a breaker?

I've no experience of them but you can certainly get WiFi enabled breakers.
I'd probably be more inclined to be looking at something of that sort (an rcbo if you can find a suitable WiFi one) than a 40a isolater.

I'm guessing you're either running a consumer unit or a single high draw hard wired and switched appliance like a car charger or sex pond at the other end any how so a breaker and rcd (combined or separate) would seem more appropriate.

Yes that’s right, single high draw item. So rcbo would do the job.
