How easy is it to figure out where the trails are in places like Tenerife/gran canaria? The guided rides look good but we don't really want to be tied down to set days and lengths of the rides?

But in January it's usually like the Arctic up there, so you might want to check on the weather and book at the last minute. Usually OK from Feb onwards.
I'd go for snowboarding!
