Help choosing a decent long zoom camera

I know the best camera is the one you have on you at the time, which is usually my iPhone 12, which has a great camera for most stuff.

Getting to the point where I'd like to take a decent-camera out with me on holidays, maybe on the bike (so weight could be a factor 🙂 ) As there have been times where the phone just doesn't quite cut it.

I'm after something that is an all in one, with a really decent zoom and "almost" slr esque, but without all the faffiness of an SLR with lenses etc etc. If such a thing exists. So long as it has decent shooting capabilities, esp at night, where the phone does struggle.

I'm sure there have got to be plenty of photographic enthusiasts / experts / pros ? on the site who may be able to recommend something ? I've got a max budget of 4-500, happy to go new or secondhand.
