Also, how hard can I prune back heather that’s gone a bit wild?

Looks like a Hebe (unsure which variety).

You can prune it back now if you wish to just above the branches with the lowest new growth.

Same applies with Heathers.

Scatter a bit of pelleted chicken manure around the base of them for a slow release feed.

That looks like a hebe of some sort.
Heather can only be pruned lightly to keep its shape. If you cut it back hard to the woody bits they tend not to regrow. If it’s gone really woody it might be worth just digging it up as you might struggle to get it looking good again.

Any mileage in burning heather grouse moor style or is that pointless?

Hebe pinguifolia, aka Veronica pinguifolia.  'Pagei' or 'Sutherlandii', possibly 

You can prune it now, but don't overdo it because it'll probably flower in a few weeks.

All heather in gardens should be burnt, preferably from space with lasers. I'm not a fan 😉

My missus is saying Hebe of sorts. I quite like a heather.

Can you bonsai it? If you are going to dig it up or burn it with fire, you could have a try at that first and see if it looks better that the current bush

oi oi!! 

The thing I learned about hebes this weekend is not only is pruning good, they also get quite woody and leggy if they're not pruned. So later in the year, pruning back towards the wood is a good idea.
